Here is the information that Disney offers for special dietary arrangements.
The form that people are required to fill out is the "Allergy Form", and
it can be emailed to the address found in the "Guest Dietary Letter Revision"
for which ever park the guest is planning to dine at.
The list of low protein foods that Disney will make available is
listed at the end of the "Updated" attachment.
Reservations can be made up to 180 days in advance.
Guests must make sure to notify Disney at that time to
make note of the PKU diet.
Then AT LEAST 3 to 4 weeks in advance, have the form in to Disney stating
where they will be dining, on what days.... and follow up with a phone call,
since they will give you authorization # and phone number of the restaurant
when you make your reservations.

Ask for a food and beverage representative
who can help arrange low protein meals.
If Disney’s customers are happy with their low protein accommodations,
Disney would love to know about it. After their experience,
it is encouraged to send an e-mail to
wdw.guest.communications@disney.com.
The compliment will go into Disney’s employee personnel file
and it means a great deal for those particular chefs and future
low protein guests. This will help ensure that Disney keeps more
low protein products on hand.
If you want to bring some items with you like snacks or
something that does not need heating, just let the Security Person doing
the bag checks know you have special dietary needs and they have no problem
with you bringing in items. State Law prohibits Disney from heating or using
foods brought in by their guests, so their chefs will not be able to heat anything
that is not prepared by them.
